I have an 00Z/71. I had a similar issue and it changed after I changed to a GMS MAF. I would also lend my direction to the throttle cable and seeing if there is anything putting any limitation on it. I know that you could have a MAF issue but do not buy a new one. I also would look towards your cam sensor, an easy replace. If you turn out to have a MAF problem, LMK here and I will sell you another from my 99C5-Z28/SS-00/Z71, they are all the same. They have no more than 100 miles on each and I will sell one to you as a member here for $50 with a refund if it doesn't help. They are shinning new and I take Papal, with over 2000 auctions on EBay since 1997. Free shipping to any Silverado member. Stop letting them take your money and get a SUN DiagNst on your truck. It could turn out to be an single O2 Sensor.

i had a pretty sticky throttlebody, seemed like i was cleaning it every three months untel i got the throttle body spaceron it. there was alot of carbon build up inside the intake, that might be some of your problem.

Check the idle air control motor. It's on the side of the throttle body. It opens and lets more air pass through the throttle body when the engine is cold ( fast idle ) then closes when it warms up. It might also be caused bya vacuum leak.
