Default Throttle body flooding

I have a 1988 chev silverado. Original engine was a 5.0 litre, now it has a 7.4 litre. I am having a problem with the injectors going into all out mode at idle speed and stahling the engine. I checked the TPS and it is reading 5 VDC for a signal, varies up to 5.01 while running. I removed the TPS and let the truck run, it runs for anywhere between 3 to 5 minutes, then all of a sudden the injectors go fully open and stahls the engine yet again. I checked for shorts I can not find anything.

has anyone experience this before? if so, what the was the cause?

I'm open for suggestions.

any help would be greatly appreciated.

Guy
