Default 99 F350 problems.

Hello, Im trying to help my dad with his truck problems, maybe you guys can shed some light.
The truck:
1999 Ford F350
5.4 Triton v-8 (gas)
4x4 auto tranny
The truck has a noticable stumble on acceleration, from idle to around 2000 rpm's. The check engine light doesnt come on,(the bulb is ok I checked). i have scanned the computer but no codes.
Here is what has been changed to try and correct this issue. Injectors have been checked (all ok) coil packs have been checked, plugs have been changed, catalytic convertor is ok. Fuel filter changed. No coolant in the oil no oil in the coolant. I unplugged the o2 sensors and ran the truck. I still do not get a code? Could the computer be stuck in open loop? How do I check for this? Also does anyone have a schematic for the Oxgen sensor cicuit? I want to install air fuel gauges to monitor what is going on.
Any help is appreciated, Im a gm guy so I'm at a loss here.
